Apple and pear galette from Call me cupcake

My front courtyard has a little pear tree line and we agreed with my neighbourgh to share them. But in the end he didn't take much so I had plenty and many more to eat. I had done Vegan pear and apples galette inspired by Green Kitchen Stories last year. So this year, I wanted to try something new and the recipe, and stumbled upon the one from Call me cupcake. It has hazelnut frangipane so if you have allergies, I suggest you change it to almonds and or any nuts you are not allergic to.

I twisted it only slightly and it was the most delicious thing:

gluten free galette

You can go and check Linda Lomelino's website, her photos are gorgeous and the recipe is perfect as it is. Except I try to not to use too much dairies and gluten so here is my take on this galette (you can otherwise go to her site for the instructions). I used butter and eggs but changed the flours :

INGREDIENTS

PIE CRUST

  • 210 g (1 1/2 cups) gluten free flour, I used 2/3 white buckwheat and 1/3 almond flours

  • 1 1/2 tbsp. granulated sugar

  • 1/4 tsp. flaky salt

  • 150 g (about 1 + 1/3 stick) very cold salted butter

  • 3-6 tbsp. ice water

HAZELNUT FRANGIPANE

  • 75 g (2/3 cup) hazelnuts

  • 75 g (2/3 stick) softened salted butter

  • 3 tbsp. granulated sugar

  • 1 medium egg

  • 1 tbsp. white buckwheat flour

FILLING & TOPPING

  • 500 g fruit (approx. 2 apples & 2 pears)

  • zest from 1 orange or 1 lemon

  • 2 tbsp. fresh orange orlemon juice

  • pinch of salt

  • 1/2 tsp. ground cinnamon

  • 1/2 tsp. ground cardamom

  • 2 tbsp. granulated sugar

  • 1 tbsp. (15 g) salted butter, melted

  • 1 tbsp. almond flour

  • 1 egg

  • pinch of salt

  • 2 tsp. turbinado sugar

If you have any suggestion on how to replace the butter, I'm in. I don't dare trying with an oil as I think it would totally change the taste! Someone was pretty pleased with the result for sure!
