I thought it would be a good idea to share some recipes I tried recently. Some cakes and popsicles which I think are perfect to try especially when it's hot outside. I thought it would be a good idea to share some recipes I tried recently. Some cakes and popsicles which I think are perfect to try especially when it's hot outside. Popsicles are one of the best things about summer. Especially if like me, you don't like ice cream so much. Easy to do and so many possibilities. Here are the two recipes I did:- Elderflower cordial ( or trylilac cordial too)- Water- Strawberries cut in slices- Edible flowersMix the cordial with water as you deem fit without sweetening it more. Fill your popsicle moulds with slices of strawberries and edible flowers. And pour the elderflower mix. Let freeze over night.- 4-5 White peaches and flat peaches- water- Fresh raspberries- Slices of lemonTake the skin off the peaches and put them into a mixer. Mix until smooth. Add a glass of water and mix again. Fill the popsicles moulds with 2-3 raspberries and one half slice of lemon and pour the mixture. Enjoy!Another recipe I recently did was a cake for Lily's birthday: Strawberry and elderflower one. I did this one but made it gluten free for her party:
Cake
- 200 g softened butter
- 100g granulated sugar or 70g of Agave syrup
- 3 eggs
- 3 tbsp elderflower cordial
- 100g of Rice flour, 75g of Almond flour and 75g of Arrow root
- 2 tsp baking powder
- pinch of salt
- zest from 1/2 lemon
Mascarpone frosting
- 250 g mascarpone cheese
- 3 – 5 tbsp (30-45 g) powdered sugar (depending on how sweet you want it)
- 1/2 cup + 2 tbsp heavy whipping cream
- zest from 1/2 lemon
- 1 tsp elderflower cordial
Fresh strawberries, for filling and garnish
Instructions:
- Heat oven to 175°C (350F).- Butter two 15 cm (6 inch) cake pans.- In a large bowl, beat butter and sugar until pale and creamy, about five minutes.- Add the eggs, one at a time, beating well after each addition. Add elderflower cordial and beat until smooth.- In another bowl, stir together flours, baking powder and salt. Add the dry ingredients to the wet mixture. Add lemon zest and stir until combined.- Divide batter between the prepared cake pans, smoothing the tops with a spoon or an offset spatula. Bake for 30-35 minutes or until a cake tester comes out clean.- Leave the cakes to cool in the pans for about 10 minutes before inverting them onto a cooling rack to cool completely.- Beat mascarpone cheese and powdered sugar (to taste) until smooth.- Add whipping cream and lemon zest and beat until mixtures thickens and reaches a spreadable consistency.- Add elderflower cordial if desired and stir until combined.- Put the first cake layer on a cake stand or plate. Spread a layer of frosting on top of it and top with hulled and thinly sliced strawberries.- Put the next cake layer on top of the other and spread with remaining frosting. Top with more strawberries and elderflowers if desired.And last but not least, I did this recipe from Green Kitchen Stories, my favourite go-to blog, app and books for vegetarian recipes and cooking inspiration. I have two of their books and it's so good with every day cooking but also when you have guests. I highly recommend!The frozen pink cake is just perfect for the summer. And I love red fruits so much, if you had not noticed. Plus, It's fresh and tasty. Oh, and healthy!So I'm not going to copy the recipe here as I didn't change a single thing.
