Buckwheat chocolate and salt cookies

Guys, I'm on a cake/cookies recipe spree it seems. If you missed it, the last one was a gluten free earl grey cake recipe. However, next post will not be one I promise!

I stumbled upon this cookies recipe on Pinterest quite a while ago. And for some reasons, I kept it aside for a while. As until now I never really knew how to change normal wheat to Gluten free wheat, but now I know a little better, so I just changed it slightly and it's still super delicious!

Warning: it's only Gluten free, not vegan as there is butter and a little vanilla ice cream on top at the end but if you know how to replace one or the other, just do it:

As an introduction, I have to say, I just fell in love with those beets ! Aren't they beautiful. I think they look like roses... Anyway, this wasn't the beginning I thought I would do. Blueberry vanilla vegan mini cakes

I have been wanting to try these vegan raw mini cheesecakes types forever. I know it might not sound appealing to a lot of you but it actually really is delicious! And I'm not saying it's very easy to make, but it's not too much trouble either. And it's super healthy. You should give it a try and believe me, you will actually like it:I found this recipe and adapted it slightly. A funny thing is people who tasted it found that it tasted coconut a lot and I was saying: I don't remember using coconut at all, it must be something else! But in fact that recipe uses a lot of coconut milk and some coconut oil (I have a fragrance free one but still...). So indeed, if you don't like coconut, that recipe isn't for you !Also, before I head on the actual ingredients and steps, a little disclaimer: the flowers on my pictures are not edible. They are wax flowers actually. Very beautiful and I love the colours of it with the blueberry cakes! But don't do it at home if you know there is a risk someone will actually eat it !

Galette des rois (the French king cake) chocolate pear recipe

There is a tradition at least in France, Quebec and Belgium right after Christmas. Eating a cake by the time of the epiphany : "La galette des rois". In the north of France and Belgium, it's basically two puff pastries with an almond paste inside. It's a delicious sweet thing. But that's not what makes it special.It's the fact that a little figurine (most often in porcelain) is hiding inside. And whoever gets it becomes the kind or queen of the day. Traditions may vary from family to family on that but I'll focus on mine and will give you a recipe I did this year that you might like (even outside of Epiphany days!):In order to find out who is going to be king or queen, the youngest child hides under the table and says the names of the guests around every time a piece is served. When the person eating it finds out, he or she becomes queen or king and gets to choose whoever is the queen or king with them.In many families, the king or queen can demand things their ways the rest of the day. We have done it a couple of times when the kids were younger but now we just have family and friends gathering. And the kids are already happy if they just have the figurine in their piece!When you buy it in bakeries, they give you those crowns with the galette you buy. But when you make it yourself you have to make your crown so Lily did it this year:And of course the best is to have guests to share it with!So now on to the proper recipe:
