Winter mood during our Christmas in Sweden

A simple winter salad recipe

As an introduction, I have to say, I just fell in love with those beets ! Aren't they beautiful. I think they look like roses... Anyway, this wasn't the beginning I thought I would do. Here is just a super simple recipe for a salad that will brighten the gloomy winter days:These beets are Chioggas. Or you can also call them candy stripes beetroot. They are an italian heirloom variety from the 19th century. And they are very tasty raw or cooked (once cooked, they become pink).Here is how you can eat this salad:
